Welcome to Sophie & Philou ! In this video, we'll show you how we make our famous chocolate letters and chocolate balls. Whether you're making a chocolate letter for Sinterklaas or delicious balls for a party, we share all our tips for the perfect chocolate creations.

Step 1: Prepare ingredients

• Choose the best quality chocolate (dark, milk, or white). At Sophie & Philou, we use premium Belgian chocolate for a rich, full flavor.
• Provide delicious toppings such as caramel, sea salt, nuts or Oreo pieces, depending on your desired flavor.

Step 2: Melt chocolate

Melt the chocolate in a bain-marie. Place a bowl with the chocolate over a pan of hot water and stir slowly until melted. This ensures the chocolate melts evenly without burning.
• Tip: Add a little cocoa butter for extra shine and a smooth texture.

Step 3: Tempering chocolate

Remove the bowl from the heat and let the chocolate cool briefly to about 27°C (check with a thermometer). Then reheat briefly to 31-32°C. This process, tempering, gives the chocolate a beautiful sheen and makes it easier to break.

Step 4: Pouring chocolate letters

Pour the tempered chocolate into silicone molds shaped like letters. Make sure the molds are well filled and shake the mold a few times to remove any air bubbles.
• Now add the toppings such as caramel or cookie pieces, which make the Sophie & Philou chocolate letters so unique.
• Let the chocolate set in the refrigerator for about 20-30 minutes.

Step 5: Forming chocolate balls

• Use a special round mold for the chocolate balls. Fill the half-spheres with the chocolate and rotate the mold so that the chocolate is evenly distributed.
• Add fillings such as praline or caramel in the center of the balls for a surprise effect.
• Close the half balls with extra chocolate and let them harden.

Step 6: Decorate

Remove the chocolate letters and balls from the mold. Decorate them with an extra layer of chocolate or sprinkle with edible gold powder for a luxurious finish.
• At Sophie & Philou we often add a final decorative touch by hand.

Step 7: Pack and enjoy

• Package the chocolate letters and balls beautifully in luxurious gift boxes.
